I’m Liz, I’m “The Vegan”

Ahhh sunshine πŸ™‚

So I went to a lake house over the weekend with some friends. Actually, I only knew 2 people… but the other 13 people were awesome! Now I have new friends! πŸ™‚ I was, of course, “the vegan” of the weekend, which was fine! I packed my own food, (and my own almond milk!) and cooked right alongside the others. The boys were even nice enough to grill my veggie burger for me! It was quite a fun weekend. But isn’t it funny the way we can be defined by our food? I love these healthy snacks!

What does this say about me?

Β This was a delicious combination of veggies & pesto, grilled by my friend Matt. It was SO good! It made me wish I had a grill… you know, not just my little george foreman! I was actually so in love with this combination, that I copied it for the next day. It was simple!

Grilled Veggies with Pesto

  • 1 yellow squash
  • 1 zucchini
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 orange bell pepper
  • 1/2 cup of pesto (here is a vegan pesto that you can find at most grocery stores!)
  • Olive oil spray
  • Sea salt
  • Vegan parmesan cheese (or the regular kind, if you’re into that πŸ˜‰ )

Slice up your veggies into bite size pieces, and toss with pesto. Depending on the pesto, you may want to add sea salt. Β Line your grill (or pan, if you want to bake them in the oven) with aluminum foil and spray with oilve oil. Grill until tender, then sprinkle with parmesan cheese. This also reheats really well, if you have leftovers!

I’ve just been craving vegetables lately, so I’ve eaten the above recipe for dinner the last… 3 days in a row πŸ˜‰ So yummy! Now I really wish I had a spiralizer so I could make this recipe from Choosing Raw!

Tonight I’m getting sushi with my friend Leslie, so I’m pretty excited about that. Do you guys like sushi? I feel like a lot of people either love it or hate it! I love it, but then again, I just get veggie rolls, so it’s not “real” sushi I suppose… maybe that’s why I like it so much πŸ˜‰

Did you all enjoy the holiday weekend? Any fun recipes for the grill?

Hittin’ the Weights

I’ve been saying for awhile that I need to stop being such a cardio junkie, and start getting into weight training. Not only do I want to tone up, but I think it will help me improve my running (which has plateaued at quite a low level. Lame!) But I just couldn’t seem to get myself over to the free weight section of the gym…

Well after some very inspiring posts about strong women I thought it was about time to get my act together! πŸ™‚

I’m fortunate enough to have access to free personal trainers at the gym where I work. (Awesome, I know!) so I scheduled my appointment last week, and had my first sweat session this morning. Let me tell ya, I’m going to be sore tomorrow!

We did a total body workout, so I could get ideas on things to do on my own. Most of it was simple stuff that I could do from home with free weights, but I also learned how to use the machines. (What can I say, those cable machines scare me!) My trainer was super encouraging, and it got me really excited to keep weight training. Now I just need to make sure I keep doing it! πŸ™‚

I’m hoping maybe the workouts will help my sleep schedule… lately I just haven’t been able to fall asleep! I keep a fairly regular sleep routine, getting up around the same time every morning, but I can’t seem to fall asleep before 2am. It’s starting to get frustrating. Does anyone have any tips for falling asleep? I tried reading, I tried watching tv, listening to classical music, turning the a/c on, trying to just relax. Nothing worked!

On a food related note, I had a potluck with my girls last night! I made pasta with pesto & vegan parmesan cheese. These girls are so sweet, and one of the girls made me my own separate bowl of chili without meat or cheese in it! They’re so thoughtful.

Look at all that food! Notice ^ my empty chili bowlΒ  πŸ™‚

What do you like to make for potlucks? I tend to make main dishes so I know I’ll have something vegan to eat πŸ˜‰
