Where Can You Eat?

Dinner out with friends often starts with “Well, where can you eat?” and the truth is, I can pretty much eat anywhere. Most places are pretty accommodating, and let’s face it, everyone has salads these days. As boring as it can be to eat salads, I always have SOME option. (Ok, so I had to get pretty creative at the Cheesecake factory, but I made it work!)

That said, it’s always really fun when the restaurant already HAS plenty of Vegan options, such as 821Cafe, here in Richmond. My friend Stephen and I went here for dinner, and it was delicious!

I decided to order the vegan burger, which came topped with spicy mustard, sprouts, and avocado. YUM!

It came with a side of vegan chili, and it made for quite a delicious meal. Honestly, the burger itself was just ok, but the sprouts, avocado and mustard took it to the next level and made it quite splendid! Sorry for the not-so-great picture, it was pretty dim in there!

For all of you with special diets (vegan, vegetarian, gluten-free, allergies) do you find most restaurants accommodating? Do you have favorite restaurants that cater to your food-lifestyle?

As for my recent workouts, I’ve been getting into P90X again. However, I decided it’s much better if I put the tv on mute, and blast my favorite workout songs! Now that I’ve done all the DVDs before, I don’t really need to hear Tony’s motivational voice ๐Ÿ˜‰ and music just gets me jumping! That seems to make the workout go faster.

Do you guys like using workout DVDs? Or do you prefer to do your own thing? Normally I like doing my own thing, but I’ve been lacking motivation lately, and following the DVD makes me work out harder.

I’m Liz, I’m “The Vegan”

Ahhh sunshine ๐Ÿ™‚

So I went to a lake house over the weekend with some friends. Actually, I only knew 2 people… but the other 13 people were awesome! Now I have new friends! ๐Ÿ™‚ I was, of course, “the vegan” of the weekend, which was fine! I packed my own food, (and my own almond milk!) and cooked right alongside the others. The boys were even nice enough to grill my veggie burger for me! It was quite a fun weekend. But isn’t it funny the way we can be defined by our food? I love these healthy snacks!

What does this say about me?

ย This was a delicious combination of veggies & pesto, grilled by my friend Matt. It was SO good! It made me wish I had a grill… you know, not just my little george foreman! I was actually so in love with this combination, that I copied it for the next day. It was simple!

Grilled Veggies with Pesto

  • 1 yellow squash
  • 1 zucchini
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 orange bell pepper
  • 1/2 cup of pesto (here is a vegan pesto that you can find at most grocery stores!)
  • Olive oil spray
  • Sea salt
  • Vegan parmesan cheese (or the regular kind, if you’re into that ๐Ÿ˜‰ )

Slice up your veggies into bite size pieces, and toss with pesto. Depending on the pesto, you may want to add sea salt. ย Line your grill (or pan, if you want to bake them in the oven) with aluminum foil and spray with oilve oil. Grill until tender, then sprinkle with parmesan cheese. This also reheats really well, if you have leftovers!

I’ve just been craving vegetables lately, so I’ve eaten the above recipe for dinner the last… 3 days in a row ๐Ÿ˜‰ So yummy! Now I really wish I had a spiralizer so I could make this recipe from Choosing Raw!

Tonight I’m getting sushi with my friend Leslie, so I’m pretty excited about that. Do you guys like sushi? I feel like a lot of people either love it or hate it! I love it, but then again, I just get veggie rolls, so it’s not “real” sushi I suppose… maybe that’s why I like it so much ๐Ÿ˜‰

Weekend Celebrations!

Wow, what a weekend! I don’t think I could have asked for a more fun filled birthday weekend!

Friday night, I went to the art walk on Broad st. Alex, Robbie and I went to Popkin Tavern for dinner, where I had a delicious veggie burger. It wasn’t one of those frozen boca patties thrown on a bun, it was a real veggie burger. I could see the veggie pieces in it! Delish!


Saturday, my brother and sister in law and I went out to lunch to celebrate my official birthday (I’m 22!) and we planned on going to Ipanema Cafe. They have a lot of interesting vegan/vegetarian food, but sadly, they were closed! So we walked around the corner to Edo Squid, which was fine by me!!


I had this massive plate of pasta, and it was SO good. (Yes, I ate the whole thing. Come on, it was my birthday! ๐Ÿ™‚ )

Despite the huge lunch, the three of us decided we still had room for dessert… so we went to Ellwood Thompson to pick up some coconut milk ice cream. Not only did they have some delicious ice cream, but they also had vegan cookies… so we had to get one of those too!


The cookie was HUGE!! We all broke it apart and mixed it into our ice cream. Definitely a good idea ๐Ÿ™‚

The night was full of celebration, but not much food… so let’s skip to Sunday!

I had lunch with Mark and Aricka at Chipotle, (my lovely grandma gave me a gift card for my birthday. YUM!) I love Chipotle, but honestly, I haven’t been going out to eat much, so I hadn’t had it in a long time! I love that Chipotle uses wholesome ingredients, and doesn’t cut corners with GMO’s and other weird things. It’s always delicious, and now I have leftovers for lunch!

What other exciting thing did I get to do this weekend? I got to meet Rebekah from Clarity in Creation! You should all check out her blog, because this girl is amazing! We met up at Pizza Fusion and split an amazing gluten free/vegan pizza. I don’t know what I was thinking, not taking a picture of the pizza when we got it, but Rebekah graciously gave me the leftovers, and I snapped a picture once I got home! This picture doesn’t do the pizza justice, but it’s all I’ve got!


We got a gluten free crust and topped it with tomato sauce, garlic, spinach, tomatoes, and peppers. This was seriously some of the best pizza I’ve ever had! If you’re lucky enough to live near a Pizza Fusion, go check it out! Not only was the pizza good, but the company was great too ๐Ÿ™‚ Rebekah, I had so much fun talking with you!! We must do that again!

Today, I get to pick up a package from my parents… If it’s what I think it is… I’m going to have an entire post dedicated to what’s in the package… Stay tuned!

Mocha Muffins -Enjoy with Friends

The only thing better than dessert? Dessert shared with friends! My best friends from Ohio made a trip down to Virginia to visit, and we started cooking up a storm in the kitchen! (Ok, cooking might be a stretch… snacking might be a more appropriate verb…) We decided to make some Mocha Muffins because they’re one of my favorite Vegan treats, and none of the girls had tried them before! I know I’ve posted pictures before, but here is the recipe,ย  I made a few changes, but for the most part, it’s the same!

Mocha Muffins

from Get Healthy With Heather


3/4 cup whole wheat pastry flour
1/4 cup fava bean and chickpea flour
1/3 cup brown sugar
1/2 cup dutch cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp sea salt
1 tbsp cornstarch (I didn’t have cornstarch, so I just added 2 more tbs of chickpea flour)

1/3 cup apple sauce
3/4 cup coffee
1 tsp vanilla

1/4 cup dark chocolate chips (I used more like 1/2 cup. We like our chocolate!)
optional โ€“ more dark chocolate chips to top the muffins

Pre-heat your oven to 350 degrees.ย  In a large bowl combine all the dry ingredients (flours, sugar, cocoa, baking soda, baking powder, salt and cornstarch).ย  Stir until thoroughly mixed, leaving no lumps.

In a smaller bowl combine the remaining wet ingredients (apple sauce, coffee and vanilla)ย excluding the chocolate chips.ย  Add the wet ingredients to the dry and mix until smooth and combined.ย  Stir in the chocolate chips.

Using a 1/4 cup measuring cup pour the mixture into 8 regular sized muffin tins coated with olive oil spray.ย  Top each muffin with a few additional chocolate chips if desired.

Bake for 20 minutes.ย  Remove from the oven when a toothpick comes out clean.ย  After 5 minutes gently remove the muffins from the tin and enjoy.

Since we’re heading to the beach today, we had to pack an array of snacks! All of our munchies we’re not only vegan, but also Soy-free, since Annie is allergic to soy.

We had some tortilla chips and dip from Trader Joe’s, some clementines, Athenos hummus with carrots, veggies, and grilled whole wheat pita. (Yes, we grilled pita on my george foreman!) We also had apples & Almond Butter ( from TJ’s because it’s the best) and Peanut Butter Puffins. (Did you know it’s impossible to be sad while eating Peanut Butter Puffins? Seriously, they just make you smile! ๐Ÿ™‚ ) All of our snacks seemed beach-friendly, so we figured they’d keep us full, at least until we could find ourselves some dinner!

The muffins were a great beach snack, and even though I made a double batch, every single muffin was devoured by the end of the weekend! (I call that success!)

I also made the girls some banana soft serve over crushed graham crackers, topped with Katie’s version of Magic Shell!! This was SO good, and we ate every last bite! Katie, the “magic shell” was amazing!
